Ingredients:

6 to 8 pound brisket
Your choice of BBQ beef rub
1 whole onion
8 ounces of beer
Your choice of BBQ sauce


Directions:

1) Rinse & Pat Dry
2) Trim excess fat, but leave 1/4"
3) Generously apply rub
4) Cook for 7 hours on "smoke", turning every 2 hours
5) After 7 hours, place in disposable foil pan
6) Cover with whole, cut-up onion
7) Pour beer into pan
8) Cover with foil
9) Cook for and additional 1 1/2 hours on Medium about 350 degrees
10) After 1 1/2 hours uncover
11) Add BBQ sauce, and cook for an additional 30 min, internal temperature should be around 190-210 degrees
