Aaron Franklin’s BBQ Brisket Recipe

Description:

Famous Texas Style Beef Brisket. Based on a receipt from a restaurant in Austin, TX. I like to cook this on a Traeger.

Ingredients:

1, 10-12 pound “full packer” brisket
1/2 cup salt
1/2 cup coarsely ground pepper
1/4 cup Worchestershire sauce
1/4 water
Brown/Pink Butcher paper for the wrap


Directions:

1) Wash and dry Brisket
2) Trim Fat to 1/2 in
3) Mix Salt and Pepper in Cup
4) Apply Salt and Pepper to brisket as a rub
5) Set smoker to 200 degrees
6) Place Brisket on Smoker for 6 hours
7) Mix Worchestershire and Water in mister
8) Mist Brisket
9) Wrap in Butcher paper
10) Return to smoker for 3 hours
11) Remove Paper
12) Place on Smoker for about 3 hours
13) Once Brisket reaches 203 degrees remove from smoker
14) Let sit for 15 min
