Ingredients: |
1 Cup Butter, Softened |
1/3 Cup Confectioner Sugar |
1 Egg |
1 Tsp Vanilla Extract |
3/4 Tsp Almond Extract |
2 Cups Flour |
1 Package Instant Pistachio Pudding Mix |
2 Cups Finely Chopped Pecans |
May need a little green food coloring |
Filling: |
2 Tbsp Butter, Softened |
2 Cups Confectioner's Sugar |
1 Tsp Vanilla Extract |
2-3 Tbsp Milk |
Directions: |
1) Cookies: |
2) In a mixing bowl, cream butter and sugar until smooth |
3) Add egg and extracts, mix well |
4) Combine flour and pudding mix |
5) Shape into 1" balls, roll in nuts |
6) Place 2" apart on greased baking sheet |
7) Make thumbprint in center of cookie |
8) Bake at 350 for 10 - 12 Minutes |

11) Cream butter, sugar, vanilla and milk |
12) Add green food coloring if desired |
13) Spoon into center of cooled cookies |
