Zucchini canned in Pineapple juice

Description:

Taste and use like crushed pineapple Prep Time: 20min
Cook Time: 30min plus 15 min
Makes: 12 pints
Notes: Use for zucchini bread recipe


Ingredients:

18 cups shredded zuchini
1/2 cup lemon juice
3 cups sugar
1 (46 ounce) can pineapple juice


Directions:

1) Bring juices and sugar to boil
2) Add zucchini and simmer 20 min.
3) Pack in hot jars
4) Process in boiling water bath 15 minutes
