Ingredients: |
| 6 to 8 pound brisket |
| Your choice of BBQ beef rub |
| 1 whole onion |
| 8 ounces of beer |
| Your choice of BBQ sauce |
Directions: |
| 1) Rinse & Pat Dry |
| 2) Trim excess fat, but leave 1/4" |
| 3) Generously apply rub |
| 4) Cook for 7 hours on "smoke", turning every 2 hours |
| 5) After 7 hours, place in disposable foil pan |
| 6) Cover with whole, cut-up onion |
| 7) Pour beer into pan |
| 8) Cover with foil |
| 9) Cook for and additional 1 1/2 hours on Medium about 350 degrees |
| 10) After 1 1/2 hours uncover |
| 11) Add BBQ sauce, and cook for an additional 30 min, internal temperature should be around 190-210 degrees |
