Zucchini Bread

Ingredients: |
1 cup shortening |
3 large eggs |
3 cups flour |
2-1/2 cups chopped zucchini squash |
2 cups sugar |
1/4 tsp double-acting baking powder |
2 tsp ground cinnamon |
3 tsp vanilla extract |
1 tsp salt |
1 tsp baking soda |
Directions: |
1) Mix Shortening and Sugar |
2) Add Eggs and Vanilla |
3) Add remaining ingredient except zuchinni, and mix well |
4) Add Zucchini |
5) Poor into 2 greased Bread Pans |
6) Bake for 1 hour at 325 |
