Ingredients: |
1, 10-12 pound “full packer” brisket |
1/2 cup salt |
1/2 cup coarsely ground pepper |
1/4 cup Worchestershire sauce |
1/4 water |
Brown/Pink Butcher paper for the wrap |
Directions: |
1) Wash and dry Brisket |
2) Trim Fat to 1/2 in |
3) Mix Salt and Pepper in Cup |
4) Apply Salt and Pepper to brisket as a rub |
5) Set smoker to 200 degrees |
6) Place Brisket on Smoker for 6 hours |
7) Mix Worchestershire and Water in mister |
8) Mist Brisket |
9) Wrap in Butcher paper |
10) Return to smoker for 3 hours |
11) Remove Paper |
12) Place on Smoker for about 3 hours |
13) Once Brisket reaches 203 degrees remove from smoker |
14) Let sit for 15 min |
